All about Peaches, Recipes, Pick your own, Best Road stand
A fun South Carolina fact (that we like to regularly remind our southern neighbors) is that we produce nearly 3 times more peaches than Georgia! Growing an annual 200 million juicy peaches gives our region ample opportunity to bake, can, simmer, and taste them right from the tree. And where there are farmstands with peaches you are likely to find seasonal produce like tomatoes, greens, blackberries, and sweet corn to name a few. Not to mention all the Certified SC sauces, jams, ciders, fresh cut flowers, and especially Chow Chow. While there are plenty of road-side stands all around, like our favorite on Hwy 25 heading toward NC, the SC Department of Agriculture has a list of local and reputable venues. Swamp Rabbit Café & Grocery has of course made this list and for good reason! So much more than a fruit stand, you can buy local produce, dairy, eggs, and chocolates as well as enjoy fresh baked breads and pastries or sandwiches. Ricotta toast with fresh peaches and basil is just one of the tasty treats on their seasonal menu. If you want to pick your own peaches then Fishers is the orchard to go visit. They have multiple farm-fresh stands in the area that have plenty of produce as well as local honey, you will need to head to Greer (with sunblock and a water bottle) to choose your own peaches fresh from the tree.
The uses for these sweet tender stone fruits are truly endless, but I thought I would share some of the ways we serve them here.
As a tasty starter we like to serve Peach Cobbler Pound Cake with Fresh Peaches from Pieladybakes.com. But my favorite part about serving this is topping it with a
Bourbon Peach Topping
- 3 cups coarsely chopped very ripe peaches
- 1 cup lightly packed dark brown sugar
- 1 cup granulated sugar
- 6 tablespoons Bourbon
- 2 teaspoons freshly grated lemon zest
Steps
- Combine peaches, brown sugar, granulated sugar, bourbon, and lemon zest in a large, heavy-bottomed pot. Bring to a boil, stirring to dissolve sugar. Reduce heat and simmer, stirring occasionally, until sauce has thickened, 20 to 25 minutes.
- Remove pot from heat. store sauce in refrigerator for up to a month.
This topping is amazing on ice cream or just enjoyed right off the spoon!
Of course, what kind of bed & breakfast would we be if we didn’t have a Peach French Toast?!?
Stuffed Peach French Toast
Thick cut French bread or Angel food cake about 2 per person
- Milk and eggs
- Peaches, ½ a peach per person
- Whipped cream
Caramel sauce
- 1 cup butter
- 1 cup sugar
- 3/4 cup French vanilla creamer (International Delight is that brand that works best. Other flavors are good too, but other brands don’t hold up.)
Melt butter and sugar until honey brown color. Remove from heat and add creamer. The mixture will bubble vigorously after adding cream, be cautious. Once it stops bubbling, stir to combine and allow the mixture to cook 3 – 5 more minutes to come together. Turn off heat and allow it to cool and “tighten” before serving. It can be stored in the refrigerator, once cooled, for 1 week and reheated when needed.
Filling
- 1 stick softened butter
- 8oz softened cream cheese
- 1 ½ cup powdered sugar, sifted
- 1 teaspoon vanilla
- Cream ingredients until smooth
Steps
- Cut slits into each piece of bread/cake
- Fill cavity with cream cheese icing
- Dip in egg wash of milk and egg
- Toast on griddle or pan till golden
- Plate and top with sliced peaches, caramel sauce, and whipped cream.
- ENJOY
