Carrot Cake Granola

 

3 cups rolled oats

            2 cups walnuts

            cup coconut

            cup dark brown sugar

            cup maple syrup     

            cup vegetable oil

            1 cup shredded carrots

            teaspoon salt

            2 teaspoon cinnamon

            1 cup dried pineapple

            1 cup chopped white chocolate

Preheat oven to 250. Combine first 9 ingredients. Toast 1 hour and 15 minutes, stirring every 15 minutes, until golden.

Once cooled add pineapple and white chocolate.
